I put onions in approximately 99% of all my dishes. If I don’t it’s because we are out of them! I made fajitas without onion recently, the horror!
Onions are so delicious and good for you too! As far as nutrients they have Vitamin B6, Vitamin C, Magnesium and Phosphorus just to name a few. I think they are a super food!
I enjoy easy recipes and have simplified the process to caramelize onions. I also came up with an onion dip recipe that is made of real food and doesn’t just taste amazing but is also good for you!
How to caramelize onions:
Get a large skillet and turn the heat to medium.
Ingredients:
-2 Large Yellow Onions peeled and cut into half moons
-4 TBLS of Unsalted Grass-fed Butter (we mostly use Kerrygold)
-2 TBLS Olive Oil
-1 tsp of Sea Salt
Directions:
Place all of the ingredients into the skillet and cook for 45-60 mins stirring occasionally.

Some recipes call for a pinch of sugar but I’m telling you these onions get plenty sweet on their own, no sugar needed!
Onion Dip
Ingredients:
-Caramelized onions using recipe above (cooled)
-4oz whole milk organic cream cheese at room temp (leave out at least 1 hour)
-1 cup of whole milk organic sour cream
-4oz organic mayo
-1 tsp pepper
-1/2 tsp cayenne pepper
-salt to taste
Directions:
Mix in a bowl and refrigerate until you serve it. It will last for a good week. You may need to stir it up before serving as it can separate a bit. Serve with ridged potato chips or a favorite of ours, carrots. We also found that the dip is amazing with rice crackers. But dip what you like!

Homemade Onion Dip is such a crowd pleaser. I know you’re thinking everyone makes onion dip but when you bring one that was not assembled using one of those sodium laden soup packets, people will lose it.
What else can you do with caramelized onions? Think of them like a condiment and that will give you an idea of how you can use them. You can put them in grilled cheese, that is one thing we do with them all the time! Put them on a steak or a burger with Blue Cheese or Gorgonzola. Put them on a veggie sandwich instead of raw onions or on any sandwich for that matter. Why not throw them on pizza? Top a baked potato! See where I am going with this? Put. Them. On. All. The.
